Man Busted With 800 Pounds of Stolen Lemons (Includes Recipe)
Boy do I have a great lemon chicken recipe for you… in honor of Dionicio Fierros who apparently REALLY loves lemons.
He lives in Southern California and was busted with 800 pounds of lemons in his car after a series of farm thefts were reported in the area. 800 pounds!! There are around 4 lemons in a pound so we’re talking about 3,200 lemons!! What was he going to do with all of those lemons?? Open a lemonade stand on a hot day? Make some lemon bars? I’m here to help. Here’s a GREAT recipe for Lemon Chicken:
Ingredients
- 4 boneless chicken breasts
- 1/3 cup all-purpose flour
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 1/4 cup lemon juice
- 8 lemon slices
- 1/4 cup chopped fresh flat-leaf parsley
- lemon slices for garnish
- salt & pepper to taste
Cut each chicken breast in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a rolling pin or flat side of a meat mallet. Season both sides of each chicken with salt and pepper. Lightly dredge chicken in flour. Shake off excess.
Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Cook half of chicken in skillet on each side until golden brown and done. Transfer chicken to a serving platter, and keep warm. Repeat with each piece of chicken.
Add broth and lemon juice to skillet and cook until sauce is slightly thickened. Add 8 lemon slices.
Remove skillet from heat; add parsley and remaining 2 Tbsp. butter, and stir until butter melts. Pour sauce over chicken. Serve immediately.
