It’s National Mac And Cheese Day!
To celebrate America’s most beloved comfort food, I thought I’d share some fun facts and recipes.
Facts:
- This family favorite dish actually dates back to the 14th century. The first recorded recipes were found in the Italian cookbook, Liber De Coquina. “Makerouns,” as they were called in medieval English was a cheese and pasta casserole. It was made with hand but pasta, which was sandwiched between a mix of cheese and melted butter.
- Thomas Jefferson was a big fan. Yup, America’s 3rd pres and the principal author of The Declaration of Independence had a pasta machine pasta and ordered pasta from Europe. According to Smithsonian Magazine, Jefferson is credited for helping to make mac and cheese popular in the US. But it was his enslaved chef, James Hemmings who learned to make the dish.
