Yesterday I was a wizard in the kitchen! I took everything out of the refrigerator and began prepping meals for when our family gets home from the delivery room. I had so many vegetables…Tomatoes, carrots, summer squash, zucchini, cauliflower, onions, sweet potatoes and even radishes! I had to use them before the trip to the hospital so I found some great recipes and even came up with my own ideas on how to use them.

But it certainly got me thinking about easy-to-make recipes that you can throw together for moments like this. Whether you’re always on the go and need to prepare a meal for your family, or maybe you’re making an easy-to-freeze dish for a friend in the hospital, here are some recipes to try!

  • 1. Carrot Soup

    Have a ton of carrots like I had in the kitchen yesterday? This is the recipe I followed, and I added the curry to give it more spice!

    Chili is SO easy to make!! I kind of just throw in a bunch of veggies, ground beef or turkey, and beans with fire roasted diced tomatoes and taco seasoning. But if you prefer to follow more of a recipe here’s one!
