Yesterday I was a wizard in the kitchen! I took everything out of the refrigerator and began prepping meals for when our family gets home from the delivery room. I had so many vegetables…Tomatoes, carrots, summer squash, zucchini, cauliflower, onions, sweet potatoes and even radishes! I had to use them before the trip to the hospital so I found some great recipes and even came up with my own ideas on how to use them.

But it certainly got me thinking about easy-to-make recipes that you can throw together for moments like this. Whether you’re always on the go and need to prepare a meal for your family, or maybe you’re making an easy-to-freeze dish for a friend in the hospital, here are some recipes to try!
