Cool Meals For Hot Days
Don’t feel like cooking in a heatwave?
Nobody does. In fact, most of us find our appetites waning during these dog days of almost-summer in New England. The forecast is calling for more oppressive heat through Thursday, so here are some ideas for meals that won’t have you sweating though making dinner.
Taste of Home gave me some great ideas, here are 3 to start:
MINT CUCUMBER AND TOMATOE SANDWICHES
Ingredients
- 3 tablespoons butter, softened
- 8 slices sourdough bread
- 1 large cucumber, thinly sliced
- 2 medium tomatoes, thinly sliced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup fresh mint leaves

Ingredients
- 1 package (8 ounces) cream cheese, softened
- 1 cup sour cream
- 1/3 cup sugar
- 2 teaspoons vanilla extract
- 2 pounds seedless red grapes
- 2 pounds seedless green grapes
- 3 tablespoons brown sugar
- 3 tablespoons chopped pecans
EASY GAZPACHO
Ingredients
- 2 cups tomato juice
- 4 medium tomatoes, peeled and finely chopped
- 1/2 cup chopped seeded peeled cucumber
- 1/3 cup finely chopped onion
- 1/4 cup olive oil
- 1/4 cup cider vinegar
- 1 teaspoon sugar
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
