How To Make Incredible Costco Rotisserie Chicken Soup From Scratch
We all know that Costco is famous for it’s low priced rotisserie chicken. You can pick one up for under $5.00 and feed an entire family of four at least twice. For folks that find other ways of using the leftovers here’s how to make incredible Costco Rotisserie Chicken Soup from scratch. Costco chicken soup recipe is below.
Last week I stopped by my local Costco to pick up a few things for the house, trash bags, paper towels etc. If you’re like me, it’s almost impossible to not go to the back of the store and pick up a big, hot, fat juicy chicken.
In my house there’s my wife, who is a very small eater and my daughter is a vegetarian, which means there was going to plenty of leftovers.
What to do with the Costco chicken leftovers? Make chicken soup!
Who doesn’t like nice hot steamy chicken noodle soup on a cold winter day. Let’s be honest it doesn’t have to be a cold day to enjoy it. Chicken noodle soup is probably America’s most consumed soup. It is quite the elixir for the common cold according to grandma’s everywhere.
Here’s the easy Costco rotisserie chicken recipe
Start by pouring a gallon of cold water into a good sized pot.
While the water is starting to boil, take the rotisserie chicken and start to remove what’s left of the meat and set aside.
Peel away all of the skin and whatever is left of the carcass and put into pot. Bring to a boil for 30 minutes.
Add one container of low sodium chicken broth (if needed)
Use a strainer to remove everything from the pot and let cool.
Add the following ingredients
Sliced carrots {3 long sticks}
One chopped small white onion
Three chopped celery stalks
3 basil leaves
1 tablespoon of salt
Half tablespoon black pepper
Teaspoon of garlic powder
While the vegetables are cooking (about 20 minutes) chop or shred the remaining meat that you set aside including what you retrieved from the boiled parts.
Add half a bag of egg noodles
Boil till noodles are soft
Remove basil leaves
Season to taste with more salt or pepper, also consider celery salt for a different taste.
